The weather here is a bit wild with a strong wind blowing our metal garden table and chairs about the place Once I've tidied up the garden I'll get ready for my trip to Leicester University tomorrow. A research group is trying to set up the same model of myocardial infarction as we use in Glasgow and have asked me to go down and trouble shoot for them.

So how else to amuse the kids on a wet and windy day but get them making banana waffles. And here's how-

6 eggs
3 bananas
splash of buttermilk (or creme freche)
1 teaspoon of baking powder
3 heaped tablespoons of flower
cinnamon to taste

Blitz everything together with some sort of blending device. Depending on the size of eggs and bananas you may need to adjust the batter with more flower or buttermilk. The batter should be quite loose. Leave to rest while your waffle maker/ non-stick frying pan warms up.

Coat the cooking surfaces lightly with oil. If using a frying pan, don't put too much batter in at once or the underside will burn before they are ready to turn. Cook to a deep golden brown. If you want them crispy add some sugar to the batter and leave until a dark brown colour.

Serve warm with maple syrup or, my personal favourite, a dollop of peanut butter. Some berries would go well with it too.
